First up, 20|Twenty at the Westin Carlsbad Resort & Spa is hosting a delicious Easter brunch on Sunday, April 9 from 10 a.m. to 3 p.m. Indulge in juicy leg of lamb, lemon rosemary chicken, poached shrimp salad, baja ceviche and marinated calamari. The Omni La Costa Resort & Spa is planning an unforgettable Easter brunch with activities for the kids. Brunch will be filled with family-friendly entertainment, there will be a large egg hunt of 15,000+ eggs and the menu will have a delicious spread of culinary delights. Guests can feast on a variety of soups and salads, chilled seafood including Alaskan king crab, shrimp, and smoked salmon and imported and domestic cheeses. There will be carving stations as well as eggs and pancake stations with various toppings and fillings. Lunch specialties feature made-to-order steak and lobster, pan-seared sea bass, and red curry risotto scallops with rock shrimp. For the little ones, there will be mini burgers, chicken tenders and mac & cheese. Easter-themed desserts like strawberry blondies and fruit pebbles marshmallow treats will also be offered.. Buffet reservations are available from 10am to 2pm, and the cost is $185 per adult and $65 per child (4-11).

Another unforgettable Easter celebration is happening at the Cape Rey Carlsbad Beach. The Coastal Easter Buffet at Chandler’s restaurant, two Easter egg hunts, face painting, a bubble station, a photo booth and lawn games on the Shearwater terrace and lawn are just a few of the activities that will be available. Brunch will feature delicious dishes, including chicken tenders and mac ‘n cheese, for the kids’ buffet. Chandler’s will also serve its dinner menu, and there’s an Easter Picnic Buffet with seafood, a salad station, a carving station, and an “Eggs and Such” station. If you’re looking for an oceanfront setting for your Christmas dining, Chandler’s at Cape Rey is the place to be. There will be two dining options at Chandler’s including a special Christmas Eve Prix Fixe Dinner and a festive Brunch on Christmas Day. 

On Saturday, December 24 from 4:00 PM to 8:00 PM., Christmas Eve Dinner will feature a four-course prix fixe meal with a variety of delicious holiday dishes. There will be a muse followed by a first course, including a choice of Maine lobster bisque or butternut squash soup. The second course features a winter salad. The countdown to Halloween 2022 is on! From picking pumpkins and costume contests to trick-or-treating and a haunted corn maze, Halloween is spook-tacular in Carlsbad. There’s something for everyone! 

Pumpkins, Family Fun and a Haunted Corn Maze at the Carlsbad Strawberry Company

Known as a longtime local tradition, the Carlsbad Strawberry Company has been the place to go to get your fill of fall fun. This year, the tradition continues with a pumpkin patch, tractor rides, a family-friendly corn maze, a sheep and goat petting area, games and food that the entire family can enjoy. The Pumpkin Patch is open from 9am – 6pm daily through Sunday, November 6.  

But, that’s not all. The Carlsbad Strawberry Company has teamed up with the Agua Hedionda Lagoon to create a hair raising adventure that’s not for the faint of heart. The Haunted Corn Maze is open from 7pm-10pm on Fridays and Saturdays in October. Teenagers and adults can wander through the maze with a warning  – the wrong turn can result in a terrifying turn of events. Scary surprises are lurking around every corner to make you jump. A portion of your admission goes to educating the future Lagoon Stewards at the Agua Hedionda Lagoon.

Eureka! Carlsbad is bringing some heat this year with the introduction of two new menu items that are sure to spice up any plans during the Halloween season. Scary Hot Fries are the restaurant’s signature french fries tossed in a painfully addicting ghost pepper spice blend, topped with cheeses, bacon and chipotle aioli. Daring eaters can cool the burn with a Chasing Ghosts cocktail featuring Del Maguey Mezcal, coconut milk, orgeat almond syrup and ghost pepper tincture. A few days before the big night, The Forum Carlsbad is hosting an afternoon of Halloween fun. From 2pm-6pm, each child will receive a complimentary bucket to collect candy from participating stores and restaurants. From 3pm-5pm, live music will be provided by local band Hullabaloo.

Unfortunately, nearly a third of California’s restaurants permanently closed throughout the course of the pandemic. Due to the social nature of eating out, the dining industry was hit hard after social distancing took hold. Some restaurants adapted to a new business model, adopting things like curbside deliveries, expanding outdoor seating, and off-site deliveries. Creative solutions like QR codes and disposable menus allowed some establishments to stay open. 

Luckily, the restrictions around the pandemic have started to lift. And with that, restaurants have started to thrive again. While things aren’t exactly like they used to be, the new normal makes sure that patrons are safe and healthy. In Carlsbad, we are happy to support the restaurants in our community and are excited to see new establishments opening every month.

Here are three new restaurants that have opened recently:

Nick’s on State

Established in 2008, Nick’s restaurants have graced the Southern California coast for close to 16 years. They are dedicated to the experience of dining and strive to keep their focus on hospitality and food quality. The culture of Nick’s restaurants is fulfilled by its staff, whom they refer to as ‘Ladies and Gentleman’. They’ve coupled their pursuit of excellence with a friendly and relaxed environment and reasonable prices.

Now, Carlsbad has its very own Nick’s restaurant. Since May of 2022, Nick’s has been serving customers high quality food both in-person and via takeout. Their menu includes American favorites like steak and seafood. They offer a variety of fresh appetizers, market salads, house specialties, sandwiches and burgers. 

Fresca Cocina

An even newer addition to the Carlsbad dining scene is Fresca Cocina – a trendy new spot for modern Latin cuisine. The chefs at Fresca Cocina have set out to ‘rediscover traditional Latin cuisine’, and their modern new building on Carlsbad Boulevard does just that. They are open Sunday through Thursday from 11:30 a.m. to 9:30 p.m. and Fridays and Saturdays from 11:30 a.m. to 10:00 p.m. They have ample outdoor seating and a fully stocked bar featuring curated cocktails, beer, wine and tequila flights.

Fesca Cocina’s Executive Chef Chris Idso has fused together a variety of Latin cultures to create dishes that are bold and bright. The menu offers everything from small plates like Chilean steamed mussels and Peruvian ceviche to street tacos and meats like Brazilian churrasco.

Village Kabob Mediterranean Grill 

Another new restaurant in the heart of Carlsbad Village is none other than Village Kabob Mediterranean Grill. The grill is a unique Mediterranean fusion eatery that mixes traditional Mediterranean dishes with new takes on favorites like shawarma and kabobs.

They offer fresh-baked pita bread, tahini sauce, and fattoush salad. You can enjoy any number of wraps with vertically cooked meats prepared to perfection. There are also mezes and shareables with everything from baba ghanoush to dolma and cheese pies. The environment is informal and welcoming, inviting guests to order up front and choose seating when they’re done.

While eating out has changed throughout the past couple of years, one thing is for certain – food is still a part of our community and restaurants are an essential part of our lives. Be sure to try any one of these new locations and support your local restaurants early and often.

For Valentines Day, couples can reserve a spot at the restaurant for $85 per person. The menu includes starters like a Cara Cara orange & petite greens salad or shrimp bisque. Entrees feature a port braised short rib, pan-seared bass, or vegetarian delicata squash quinoa. Dessert is topped off with a strawberry balsamic pavlova and a smores takeaway for nearby firepits. 

Omni La Costa Resort & Spa

Another Carlsbad landmark that is serving up a few different options for Valentine’s Day eats is the Omni La Costa Resort & Spa. They are offering an intimate prix fixe dinner at Bar Traza on Valentine’s Day weekend. The meal has a special Carlsbad theme – handpicked Carlsbad strawberries. For $89 per person, couples can see the strawberries come to life in unique platings. The menu starts with a strawberry gazpacho shooter and then moves on to items like the filet and gulf shrimp with strawberry compound butter and brûlée’d ricotta with strawberry and balsamic glaze.  

Reservations are recommended through OpenTable and guests can reserve childcare onsite at Kidtopia Night Camp by calling 760-931-7543. 

Date Night at Bob’s Steak & Chop House: February 14, 2022, 4:30-9 pm

If strawberries aren’t your favorite taste profile, the resort is also offering reservations that come complete with a bottle of wine at the Omni’s Bob’s Steak & Chop House. This dinner will feature the finest steak options, showcasing a dry-aged pork tomahawk and Australian rack of lamb as well as the restaurant’s signature cote de boeuf (bone-in ribeye). Prices for a date night at Bob’s Steak & Chop House start at $95 per person.

 Fireside Insta-S’mores: February 1-28, 2022

Lastly, Omni guests who are dessert enthusiasts can skip the savory dinner reservation and get right to business. The resort is offering private fire pit reservations complete with s’more supplies, sodas, waters, and hot cocoa for up to 12 people on Bar Traza Terrace overlooking the La Costa valley and golf courses. S’mores boards will include house-made strawberry and vanilla marshmallows, heart-shaped sugar cookies, and red velvet cake cookies.

Romantic Activities

Carlsbad Village

If you want a night out on the town for Valentine’s Day, the Village is the place to be. This year, the Village is hosting three separate activities to celebrate the holiday. The first is the 5th Annual Heart of the Village Blood Drive. While not necessarily a common date activity, the blood drive is a great way to spread love in a big way.

The second is the 1st annual Valentine Pop-Up. It will feature a one-stop shopping event for everything you need to spoil your loved one this holiday. Chocolate, flowers, jewelry, and gift wrapping will all be on-site so that you can make sure you have all the gifts you need on the big day.

Lastly, the Village is hosting its second annual Follow Your Heart Treasure Hunt. 50 custom glass hearts have been hidden throughout the Village at different iconic places. Participants can sign up to search for the hearts and win prizes with a date to remember.  

The Beach Genie

Beach Genie is just what it sounds like – a place that will make your beach dreams come true. The $139 Turkey Family Feast can serve up to eight people and includes all of the favorites. Herb-roasted turkey breast, sides, mushroom stuffing, cranberry relish, and artisan bread will be fully cooked and chilled, with heating instructions – ready to pick up on November 23rd or 24th. They will also be offering a smaller version of the feast for four people or individual turkey plates for smaller gatherings. Another resort that is offering a variety of dining options this holiday season is the Park Hyatt Aviara. The California Salon at the Park Hyatt will be starting the day early with a Thanksgiving Day Brunch Buffet starting at 11:00 a.m. and lasting until 4:00 p.m. for only $105 for adults and $55 for children. Ember and Rye will be hosting a Thanksgiving day buffet with a family-style feast for diners of all ages.

All in all, it’s no surprise that the show and the toys are a great hit. That’s why LEGOLAND opened Ninjago as a place for fans to experience the adventure in real life. LEGO Ninjago World centers around an exciting ride where guests have the ability to blast animated fireballs, lightning, shockwaves, and ice at enemies. The ride climaxes with the battle to defeat the Great Devourer. Each rider can rank their scores against friends and family.  

Starting this month, and through September, LEGOLAND is celebrating the Ninjago 10th Anniversary. 

Guests who visit during the anniversary will get the chance to celebrate the decade of Ninjago virtually and in real life. The two worlds are colliding for an adventure that is wrapped in celebration – a testament to the skills of Master Wu and his talented team of ninjas.

During the Anniversary celebration a new challenge has arisen. Master Wu and his team need guests’ help to uncover the six golden fragments of the missing Golden Amulet. The beloved team has been searching for the amulet for years – and only now can guests at LEGOLAND help get it back. The park has challenges spread out throughout Ninjago World – obstacles that you can get rewarded for as you complete them and come closer to restoring the Amulet for Master Wu, Kai, Lloyd, Zane, Cole, Nya, and Jay. 

The challenges at the park are a mixture of virtual games and real life encounters. Outside of the ride, Ninjago World will be filled with characters, demonstrations, and activities to celebrate Ninjago’s crowning achievements. La Lloyd will make an appearance and will host opportunities for young ninjas to train alongside him. There will be real life demonstrations about how to stand up to bullying with anti-bullying techniques showcased by Kidpower. And, there will be martial arts lessons from DeStolfo’s Martial Arts team.
